If you want to do something different then this vegetarian recipe is an excellent choice. At the same time you will get the overwhelming result with a minimum of effort.
Ingredients:
1 (medium size)- Eggplant
1/2cup -Green peas (cooked)
1-Onion (Finely minced)
1-Tomato (chopped)
1-Green chilli (cut into small pieces)
½ tsp- Red chilli powder
1/4tsp-Turmeric powder
1/2tsp- Garam masala powder
Salt- As per taste
Coriander leaves (chopped)- For garnishing
Direction:
Wash the eggplant properly & rub oil all over the eggplant with help of a brush.
Place it directly on medium temperature (on the oven).
Turn it over at regular intervals to get the fully roasted eggplant.
When done properly remove from the oven & keep it in a bowl (full of cool water).
Let it cool & take off the skin carefully. Crush the soft substance.
Take a kadai/Chinese wok & heat oil on medium temperature in it.
Add onions & green chilli. Let it fry till it turns golden in colour.
Now add turmeric powder, chilli powder, salt & garam masala powder.
Pour the tomato & stir well. Allow it to fry until tender.
Add eggplants & green peas. Fry it for 7-10 minutes.
Take it off from the heat & place it in the serving bowl.
Garnish the top with coriander leaves & serve.
