The good old humble pie, a traditional baked dish which is made of pastry dough and a variety of fillings either sweet or savory. These pies evolved as time passed by and now we can make pie of anything be it apple, meat mince, vegetables.
Let’s bake a vegetable pie with a difference as we don’t use any dough as base but the vegetable itself. Trust me it’s gonna be different and delicious.
Ingredients:-
- Cabbage(medium) 1
- Mushrooms 100gm
- Spring onions 50gm
- Eggs 3
- Fat 30gm
- Milk 50 ml
- Grated cheese 30gm
- Bread crumbs 30gm
- Butter 15 gm
- Salt and pepper as per taste
Method:-
- Separate leaves from cabbage and boil in salted water for a short time. Remove and drain when done.
- Set aside the large leaves and chop the remaining cabbage.
- Chop mushrooms and spring onions with tender leaves.
- Prepare scrambled eggs with egg and milk, seasoning it to taste.
- In a little fat, sauté onions and mushrooms.
- In a greased baking dish, spread a layer of cabbage leaves. Over this, put a layer of scrambled eggs. Cover with a layer of mushrooms and onions.
- Continue till all the vegetables are used up. Cover with grated cheese and breadcrumbs. Dot some butter on top.
- Bake at 175 degree C(350 degree F) for about 30 minutes, or until the top is golden brown
- Serve with gravy.
Ingredients for Gravy:-
- Butter 30gm
- Milk 1cup
- Refined flour 60gm
- Vegetable stock 1/2cup
- Onions 1
- Marmite or other Yeast extract 2tsp
- Bay leaf 1
- Salt to taste
Method:-
- Melt the fat.
- Add chopped onions and fry till golden brown.
- Add the flour and blend till for 5 to 7 min till it becomes brown. Keep stirring all the time.
- Remove the pan from fire and cool. Add stock and milk stirring well to form a smooth mixture.
- Mix in marmite dissolved in a little stock. And add salt.
- Return to fire and simmer till gravy is of the required consistency (thinner than sauce) and well cooked.
