Ingredients:
- Shallot- 2 tbsp (minced)
- Canola oil- 1 tbsp
- Lime juice- 2 tbsp
- Honey- 1 tsp
- Rice vinegar- 2 tsp
- Cashew- 2 tbsp (minced & toasted)
- Salt- According to taste
- Kiwis- 4 (skin removed & minced)
- Red bell pepper- ½ cup
- Cayenne pepper- A pinch
- Ripe banana- 2 (firm & chop into ½ inch thick slice diagonally)
- Fresh mint- 1 tbsp (finely sliced)
Direction:
- Take a medium sized bowl & mix together salt along with the lime juice, cayenne, oil, honey, shallot & vinegar.
- Mix well & then again add the mint along with kiwis, bell pepper & banana.
- Toss properly to get a good coating & then scatter the cashew before serving.
