Beetroot is quite familiar as red beet or table beet or is commonly called beet. It belongs to the same family as chard & spinach. In beet root you can get the root as well as the leafy portion. We usually have it as a cooked veggie or as an ingredient in a green leafy salad or sometimes we even have it boiled or steamed. Along with the red portion the leafy green section is also edible, which can be consumed steamed or boiled.

Hot and Healthy Beetroot Soup
Ingredients:
- Beetroots- 8
- Lemon juice- 2 tbsp
- Potatoes- 3
- Salt- As per taste
- Onion- 1 cup (chopped)
- Pepper- ½ tbsp
- Vegetable stock- ½ litres
- Yoghurt (homemade) – 250 ml
Direction:
- Firstly clean the beetroot well & sliced then finely.
- Remove the skin of the potatoes & then thinly dice them.
- Now take a frying pan & add the chopped onion along with the diced potatoes, beetroots (grated & vegetable stock).
- Allow them to cook till the vegetables turn tender.
- Filter the soup & dispose the vegetables.
- Pour lemon juice into the soup & mix well.
- Now add the yoghurt (homemade) & mix again properly.
- Use the salt as well as pepper for seasoning & your delectable beetroot soup is ready.
