Bengali Mochar Ghonto( banana flower crumble top):

banana-flower-vegetable1Banana flower is a tasty and at the same time a healthy food too. It has several medical uses and is also a diuretic agent. It has the potential to increase progesterone.


Ingredients:

One full mocha or banana flower
Potato- 2 medium sized (cut into small cubed)
Green chillies- 3-4
Sugar – ½ tsp (for caramelizing)
Salt- as per taste
Ghee-1 ½ tsp
Graded coconut (optional)
Cinnamon stick- half inch
Cloves-4
Green cardamom- 2-3
Mustard oill-5-6 tablespoon
Ghee- 1 tablespoon
Garam masala powder- a pinch
Jera/cumin seeds-1/2 tsp
Cumin paste/powder- a pinch
Bay leave- 2-3
Gram flour made bora (pour water in gram flour, make a thick mixture, make smooth, round dumplings and fry until turn brown in colour).

How to cut banana flower:

There is a very distinct way of cutting a banana flower.Rub oil in your hands and knife before cuting the banana flower. Open the outer brown cover and take out the flowers. Remove the blackish thread in every flower and cut the flower into small pieces. Repeat the same process for every cover. Wash these flower pieces properly and soak into lime water (if lime is not available then use a pinch of turmeric into the water). Remove after 10-15 minutes and boil in a pressure cooker (3/4 whistles at least), add little bit of salt and a pinch of turmeric. Release the water and keep the flower in a separate container.

 
Direction:

Take a kadai and heat up oil in it. Add bay leaves and cumin seeds.
Fry for a few seconds and then add the potato.
Now add turmeric powder, ginger paste, green chillies, cloves, cinnamon, and cardamom.
Stir a little bit and add salt & sugar. Then pour the boiled banana flowers.
Add the gram flour made bora into the mixture .
Then tour water and let it cook till the water evaporates.
Now add ghee (if want a pinch of garam masala powder) and remove from heat.
Garnish the top with grated coconut & serve with plain rice.
