Carrot Fry
When you are planning to prepare something healthy for your family, but at the same time getting worried that your kids might not like the taste then this preparation is your perfect solution.
Ingredients:
- Carrot- 3 (cleaned well & grated)
- Coconut- 1 cup (grated)
- Onion- 1 (chopped)
- Chana dal- 1 tsp
- Mustard seeds- 1 tsp
- Urad dal- 1 tsp
- Jeera/cumin- ½ tsp
- Red chillies- 1-2
- Oil- 3-4 tbsp
- A few curry leaves
- Salt- As per taste
- Hing/ asafoetida-A pinch
- Turmeric powder- ½ tsp
- Chilli powder- As much heat you can enjoy
Direction:
- Take a frying pan & heat oil on medium temperature.
- Now add the chana dal along with the curry leaves, cumin, urad dal, hing, mustard seeds & red chillies.
- Stir well.
- When the mustard seeds begin to crackle pour the chopped onion & allow it to fry till they turn golden brown in colour.
- Pour the washed carrots & let it fry for a few minutes.
- Add the salt along with the turmeric powder & stir well for almost 10- 12 minutes.
- When the carrots are cooked well then add all the coconuts (grated) & red chilli powder & fry for almost 5-8 minutes.
- Remove from the heat & your tasty carrot fry is set to begin its magic.
