We just love to have raita, specially in summer times as it gives us some cool sensation. For adding some extra fun into your raita preparation, try the following recipe & enjoy its delicious taste.
Ingredients:
- Oil- 2-3 tsp
- Red chilli- 1
- Lauki- 1
- Cumin- 2 tsp
- Salt- As per Taste
- Green Chilly- 4
- Coconut Grated- Half
- Mustard- ½ tsp
- Coriander- For Garnishing (Diced)
Direction:
- Firstly you need to remove the skin of long melon & then cut it into small pieces.
- Use the pressure cooker to make the lauki cubes tender.
- Remember to cook it for almost 2-3 minutes & try to avoid over cooking.
- For preparing a paste, mix together coconut along with jeera/cumin & green chillies.
- Pour as much water as required.
- Now beat the card well & add a little bit of salt along with the coconut paste.
- Add the cooked lauki into the mixture & check the taste of the salt.
- For seasoning use the jeera along with mustard & sprinkle some oil over the top.
- Before serving with pulao or paratha or rice, garnish with chopped coriander.
