Irrespective of ages achar or pickle is a mouth- watering preparation. Having it with roti or parathas is always overwhelming. So try the following pickle preparation & have some tasty fun.
Ingredients:
- Gingelly oil- 500 ml
- Garlic- 1 kg
- Salt powder- 100 gm.
- Lime fruits-30
- Chilli powder- 100 gm.
- Mustard- 10 gm.
- Asafoetida- 10 gm.
- Turmeric powder- 10 gm
- Coriander seeds- 30 gm
- Jiggery powder- 100 gm
- Cumin- 10 gm
- Fenugreek- 10 gm
Direction:
- Take a frying pan & dry roast the fenugreek along with asafoetida, coriander seeds & cumin, until it turns golden brown in colour.
- Now use the blender to mix all the roasted spices well.
- Chop the lime fruits & squeeze well to extract the juice.
- Filter the juice & keep it separately.
- To escape the bitter taste you can pour a pinch of salt into it.
- Take a kadai / Chinese wok & heat the gingelly oil over the medium flame.
- Now pour the mustard. When it begins to crackle add the garlic (skin removed).
- Pour the lime juice when it is ΒΌ th cooked.
- Allow the garlic to cook a little bit more & then pour the salt along with masala powder, turmeric powder & chilli powder.
- Let all the ingredients cook well (3/4) & pour the jiggery.
- Hold it over the flame for almost 7-10 minutes.
- Take it off from the oven & let it cool down completely.
- Now transfer it into a clean bottle.
