Halibut with Zesty Peach Salsa
Ingredients:
- Brown sugar- 1 tbsp
- Orange juice- 1/3 cup
- Lime juice- 2 tbsp
- Canola oil-2-3 tbsp
- Halibut steaks- 6 ounce
- Salt- As per taste
- Garlic clove- 1 (diced)
- Grated lime peel- 2 tsp
- Preparing Salsa:
- Red onion- ¼ cup (chopped)
- Frozen or fresh peaches- 2 cups (minced)
- Orange juice- 2 tbsp
- Salt- As per taste
- Fresh cilantro- 1 tbsp (diced)
- Sweet red pepper- ¼ cup
- Lime juice- 2 tsp
- Jalapeno pepper- 1 (seeded & diced)
Direction:
- Take a large sized bowl & add all the first eight ingredients (except halibut).
- Stir well to mix them properly.
- Take off ¼ cup & cover the remaining quantity.
- Place the cover bowl in a refrigerator.
- Now take a large ziplock bag & pour the removing mixture.
- Pour the halibut into the bag.
- Lock the bag & shake it gently for proper coating.
- Place it for almost 2 hours into your refrigerator.
- In another bowl mix all the salsa components & cover it.
- Place the salsa mixture into your refrigerator till you need it for serving.
- When you are grilling the fish then use the non stick spray over the grill.
- Take off the marinade from coated fish.
- Over medium temperature grill the fish fillets (4-6 minutes every side) or you can also broil it.
- Remember to use the remaining marinade for occasional basting.
- Serve this grilled fish with the reserved peach salsa.
