Kesar Pulao

kesar-polau1It is a very special recipe prepared in Indian Homes on very special occasions. Indians use it as a replacement of plain rice. Its goes excellently with meat recipes.


Ingredients:
Basmati rice- 1 cup
Kesar (saffon)- few strands
Sugar- 1 cup
Cloves-
Cardamom- 4
Dry frits (mixed)- cashew, almond, pista
Ghee- 4 tsp
Raisins-2 tsp
Varak ( Edible silver paper)-
Mustard seeds- 1 tsp

Direction:

Clean the rice properly & soak it for 30-35 minutes.
Take a big bowl and put the rice in it & pour water.
Put the container on medium heat and let the rice boil.
When half of the water is evaporated (half done rice) add ghee & sugar. Allow it to cook properly.
When the water is evaporated completely and the rice is cooked then add half of the fruits, saffron & cardamom.
Stir continuously to mix well & let it cook for 10 more minutes with the cover on the top.
Remove from heat and garnish the top with remaining dry fruits, raisins & silver paper.
Dish is ready to serve.
