Corn is considered quite nutritional for our health & you always want to provide your family with healthy preparations. Use corn in your chicken dish & give your loving family some healthy as well as a tasty option.
Ingredients:
- Corn kernels- 1 cup
- Ginger- 1 inch
- Coriander powder- 1 tbsp
- Salt- as per taste
- Oil- 1-2 tbsp
- Chicken breast (medium sized) – 4 (skin as well as bone removed)
- Tomatoes (medium sized) – 3
- Yoghurt- 2 tbsp
- Capsicum (medium sized) – 2
- Garam masala powder- ½ tsp
- Coriander leaves- ½ cup
- Turmeric powder- ½ tsp
- Red chilli powder- ½ tsp
- Garlic flakes- 5-6
Direction:
- Firstly wash the chicken breasts properly & then chop it into 1 cm square portions.
- Now clean the capsicum & then chop it into halves & remove all the seeds (chop it also in 1 cm square portions).
- Remove the skin & dice the garlic & ginger.
- Use the blender to make a puree of those medium sized tomatoes.
- Clean well & chop the coriander leaves.
- Take a medium sized saucepan & pour 3-4 cups of salt water.
- Now boil the corn kernels into the salted boiling water till get the soft texture.
- Take it off from the oven & keep it separately.
- Take a kadai/Chinese wok or a non stick frying pan & heat oil over medium temperature.
- Add the chopped garlic-ginger & stir fry the mixture.
- Pour the puree & stir well over medium temperature.
- Now add the coriander powder along with red chilli powder & turmeric powder.
- Stir well all the ingredients.
- Place the chicken pieces & allow it to fry for almost 6-7 minutes.
- Remember to stir continuously.
- Pour the yoghurt along with salt, boiled corn kernels & capsicum pieces.
- Stir well & reduce the heat little bit.
- Let it cook till the chicken pieces are cooked well.
- Now sprinkle the garam masala powder along with chopped coriander leaves.
- Mix softly before serving.
