Mutton preparations are always mouth watering & widely appreciated by food lovers. So it’s quite a preferable ingredient for every occasion. Try the following kebab & provide your guests with some different taste.
Ingredients:
- Mutton- 16 ( pasandas )
Ingredients for marinade:
- Peppercorns- 1 tsp (mashed)
- Salt- As per taste
- Mint leaves- 1 ½ tbsp
- Mustard oil- 4 tbsp
- Raw papaya- 1 tbsp
- Green cardamom powder- 1 tsp
- Garlic-ginger paste- 2 tbsp
- Garam masala powder- 1 tsp
- Dagad phool/lichen stone flower powder- 1 tsp
- Coriander leaves- 1 ½ tbsp
- Green chilli- 4-5
Direction:
- Make a fine paste of mint leaves along with green chillies, coriander leaves & green papaya.
- Now pour all the dry ingredients along with garlic-ginger paste.
- Mix all the ingredients all & rub over the mutton pasanda.
- Allow it to stay marinated for almost an hour.
- Now cook it over stone slab (traditional cooking over kadapa stone).
- Arrange for piece of kadappa or rough granite having almost 11/2″ length x 1″ breadth x 2″ layer.
- Clean the stone well & place it over the bricks.
- Make sure that it is balanced well.
- Place the charcoals under heat the granite properly.
- Scatter a little bit of clarified butter/ghee or oil over the granite & place the marinated meat picattas.
- Remember to brush them with oil often & turn them.
- Let it cook well before you take it off from the heat.
