We Indians love to have some chutney at the end of our meal. We know that carrot itself is a healthy vegetable. If you grab the opportunity of carrot chutney you will give your family a healthy as well as tasty dessert.
Ingredients:
- Carrot- ½ kilo
- Fresh ginger- 30 gm (cut into a fine long strip)
- Red chilli pepper- ½ tsp
- Garlic- 2 clove
- Vinegar- 1 ½ cup
- Cardamom (crushed) – ¾ tsp
- Sugar- 2 cup
- Salt- As per taste
- Almond- 6-7 (chop in half)
- Raisin- 4 tsp
- Water- 1 cup
Direction:
- Peel & grate the carrots properly.
- Cut the ginger into long stripes & mince the garlic.
- Take a medium sized saucepan & pour the garlic as well as ginger, grated carrot & water.
- Place it on low temperature.
- Allow it to boil till it gets tender as well as the water evaporates.
- Stir the mixture well.
- Now add the sugar along with the vinegar, salt, crushed cardamoms, almonds & raisins.
- Allow it to cook until the gravy thickens.
- Take it off from the oven & let it cool down.
- Place it in the glass jar & firmly fix the cover.
- Your chutney is ready; you can serve it almost after 2 days.
