Mango is the king of fruits. It has an exciting flavour and a great mouth watering taste. When you use it to compliment another ingredient it results in a real exciting creation. This dish epitomizes that fact.
Ingredients:
- Oil- 2 tbsp
- Curry paste- 4 tsp
- Mango chutney (hot) – 1 tbsp
- Tomatoes- ½ cup (chopped)
- Coriander leaves- 1 tbsp (diced)
- Water- 6 cups
- Onion- 1 (chopped)
- Shrimp- 500 gm (peeled & the dark dorsal vein removed)
Direction:
- Take a kadai (Chinese wok) or a frying pan & heat oil over medium temperature.
- Pour shrimp & allow it to fry till it turns light brown in colour.
- Take it off from the kadai & place it separately.
- Now add the chopped onions & stir for almost 2 minutes (till it turns golden in colour).
- Pour the dices tomatoes along with water & curry paste.
- Stir well & let it cook for almost 2-3 minutes.
- Now pour the fried shrimps.
- Cover the kadai & allow it to simmer for almost 5-6 minutes (till the shrimps are well cooked) over the low heat.
- Add chutney & stir well.
- Before serving decorate with chopped coriander leaves.
