Tomato Soup With Apples

Tomato Soup

Ingredients:

  • Canned Tomato- 3 cups (drained)
  • Apple- 1 ½ cups (cut into cubed)
  • Onion-1 ½ (finely chopped)
  • Garlic- 1 tsp (minced)
  • Celery- 1 cup (chopped)
  • Bay leaf- 1
  • Curry powder-as per taste
  • Ground black pepper- as per taste
  • Rice (long grain)- 1 cup
  • Chicken broth- 5-6 cups
  • Thyme- ½ tsp
  • Milk (fat free)- 1 cup
  • 2 tablespoons olive oil

Directions:

  • Take a saucepan and heat up olive oil to a medium temperature.
  • Then add onion, garlic & celery.
  • Fry for few minutes & add curry powder.
  • Stir continuously, then add tomato, bay leave, black pepper, thyme & rice.
  • Mix properly & let it boil.
  • Pour chicken broth &  let it simmer for 25-30 minutes.
  • Once the is rice cooked remove the bay leave.
  • Pour the mixture into the blender and make a smooth liquid.
  • Transfer the liquid in the saucepan and garnish the top with apple cubes.
  •  Heat it to a medium temperature for 4-5 minutes and remove from heat.
  • Pour the liquid in soup bowl and serve hot.
