Tomato Soup
Ingredients:
- Canned Tomato- 3 cups (drained)
- Apple- 1 ½ cups (cut into cubed)
- Onion-1 ½ (finely chopped)
- Garlic- 1 tsp (minced)
- Celery- 1 cup (chopped)
- Bay leaf- 1
- Curry powder-as per taste
- Ground black pepper- as per taste
- Rice (long grain)- 1 cup
- Chicken broth- 5-6 cups
- Thyme- ½ tsp
- Milk (fat free)- 1 cup
- 2 tablespoons olive oil
Directions:
- Take a saucepan and heat up olive oil to a medium temperature.
- Then add onion, garlic & celery.
- Fry for few minutes & add curry powder.
- Stir continuously, then add tomato, bay leave, black pepper, thyme & rice.
- Mix properly & let it boil.
- Pour chicken broth & let it simmer for 25-30 minutes.
- Once the is rice cooked remove the bay leave.
- Pour the mixture into the blender and make a smooth liquid.
- Transfer the liquid in the saucepan and garnish the top with apple cubes.
- Heat it to a medium temperature for 4-5 minutes and remove from heat.
- Pour the liquid in soup bowl and serve hot.
