Vegetable Biryani

biriyani1Most of the Indians love to have biryani. But most of the time we choose non veg items for preparing it. This time choose some of your favourite vegetables to prepare it. Vegetables are always important for your balanced diet. So try to make it in some tasty way.

Ingredients:

  • Green peas- 150 gm
  • Basmati rice- 2 cups
  • Onion- 3 (sliced finely)
  • Salt- As per taste
  • Green chilli- 2 (chopped finely)
  • Dry fruits (raisin, cashew, nuts)- 3 tbsp
  • Cloves- 3-4
  • Tomato- 4
  • Cinnamon- 1 tsp
  • Caraway seeds- 1 tbsp
  • Red chilli powder- 1 tsp
  • Vegetable oil- 4 tbsp
  • Ground black pepper- ½ tsp
  • Mustard seeds- ½ tsp
  • Yoghurt- ½ cup
  • Mixed vegetables (French beans, potato, cauliflower, carrot)- 1 cup
  • Coriander leaves- For garnishing

Direction:

  • Firstly clean the basmati rice well.
  • Take a pressure cooker (you can do it even in a microwave) & pour the rice along with 3-4 cup water, salt (a pinch of it) & dry fruits.
  • Chop the vegetables into small pieces & fry well individually (even the peas).
  • Take a kadai or a frying pan & heat oil (1 tsp) over the medium temperature.
  • Add mustard seeds along with green chillies, black pepper, cloves, caraway seeds powder & cinnamon.
  • Stir well for a few minutes & then pour the chopped onions.
  • Stir well again & allow it to fry till it turns golden in colour.
  • Now add the red chilli powder along with the salt.
  • Pour the chopped tomatoes & stir well.
  • Allow it to fry till it turns tender.
  • Before you pour the yoghurt blend it in your blender.
  • Stir well & then add the fried vegetables.
  • Stir well for a few seconds & then pour the cooked rice.
  • Gently stir with other ingredients so that rice grains remain intact.
  • Allow it to cook for almost 3-4 minutes.
  • Take it off from the oven & transfer into serving plates.
  • Before serving use coriander leaves for garnishing.
  • You can serve it with pickle or raita or some other spicy preparations.
