In Indian households pulao is not new, but here we can prepare it in a healthy way. Instead of making it non-veg you can easily add various vegetables, which will serve you your necessary nutrients. So try the following preparation to get the important nutrients with some excellent taste.
Ingredients:
- Onion- 1
- Basmati rice- 2 cups
- Salt As per taste
- Cashew nuts- 2 tbsp
- Peas- ½ cup
- Ghee/clarified butter- 3 tbsp
- Cauliflower- 1 cup (chopped into small florets)
- Turmeric powder- A pinch of
- Potatoes- 1 (chopped into cubes)
- Raisins- 1 tbsp
- Carrots- 1 (chopped into cubes)
Paste ingredients:
- Garlic cloves- 5
- Cinnamon sticks- 2
- Ginger- 1 inch
- Onion-1
- Cardamoms- 3-4
- Cloves- 3
- Mint leaves- ¼ cup
- Green chillies- 2
Direction:
- For almost half an hour soak the basmati rice.
- Take a kadai or Chinese wok & melt the ghee over medium temperature.
- Now fry the raisins along with the cashew nuts.
- Take it off from the oven & place it separately.
- Arrange a thick bottomed vessel & add the remaining ghee.
- For almost 8-10 minutes fry the paste over medium temperature.
- Now pour all the vegetables & stir well.
- Allow it to cook till you get the tender texture.
- Sprinkle the turmeric powder & stir well to mix properly.
- Pour the soaked rice along with salt & water (four cups).
- Stir properly & cover the vessel.
- Let it cook over the low heat till the rice is done well.
- Remember to stir occasionally.
- Before transferring into the serving bowl pour the fried nuts as well as raisins.
- Serve this hot pulao with raita or various other dishes.
